Mini Banana and Pineapple Muffins

Ingredients

¾ cup (110g) self raising flour

¼ cup (55g) brown sugar

½ tsp cinnamon

90mL prepared Nan Pro 3 Toddler Milk

1 egg, lightly beaten

2 tbsp vegetable oil

½ small ripe banana, mashed

¼ cup well drained crushed pineapple

Step by step
  • Instructions

    1. Preheat oven to 190°C/170°C fan forced. Grease a 24-hole (1 tablespoon/20mL) mini muffin pan.

    2. Place flour, sugar and cinnamon in a medium bowl; make a well in the centre; pour in combined Nan Pro 3 Toddler Milk, egg, oil, banana and pineapple; mix until just combined.

    3. Divide mixture evenly into prepared muffin pan. Bake 15 minutes or until golden.

    TIP: Extra muffins are suitable to freeze for later use.
